Beef Mixed Leaf Salad

Easy and fulfilling salad for today’s lunch menu- 250g scotch fillet cubed (cooked the night before) with capsicums, mushrooms and quarter avocado tossed with a mixed leaf salad.

Topped with alfalfa shoots and home made (no olive oil or dairy) pesto.

Take that, dairy and olive oil ban!

    Thanks very much 🙂 I actually use coconut oil to cook with. Very little of course but what your trainer said makes perfect sense. I thought it was more for training/muscle gain fat loss reasons. 🙂 Your training and dedication is very impressive 🙂

    I thought I’d ask my trainer again (he’s told me once before but I couldn’t remember what the reason was) why I should stay away from olive oil, so sorry about the late response. The clarification is that olive oil is perfectly fine as is, however it’s not the best to cook with because it’s got a relatively low “smoke point”.
    I found out more information on what he meant on this website, so it looks like sprinkle of olive oil is fine!
