Quick easy way to spruce up the good ol’ cauliflower and broccoli. I cut my florets a little chunkier to give more crunch and left out the grated coconut but still tasted fantastic. Yum!
- Cauliflower / Broccoli florets – 3 cups, finely chopped
- Onion – 3 tbsp, finely chopped
- Greenchilly – 2 no.s, chopped
- Mustard seeds – 1/4 tsp
- Turmeric powder – 1/4 tsp
- Grated coconut – 3/4 cup
- Cumin powder – 1/4 tsp
- Canola oil as needed
Heat oil & splutter the mustard seeds. Add the chopped onions & greenchillies & stir fry till the onion turns slightly brown. Add turmeric powder & the chopped cauliflower/broccoli florets. Cover cook on low heat adding 1 tsp salt & 2 tbsp water for 10 -15 minutes on low heat.
Add the grated coconut & stir fry on high heat for a minute. Finally add the cumin powder, mix well & remove from heat.
