Couple that with an insatiable obsession with nut butters and wa-la~ Cacao-nut Protein Cookies that are low sugar and carbs, but big on healthy oils and nutrients. I’ve added walnuts and flaxseeds (linseed) to the mix and have coated a batch with shredded coconut, but this recipe is a great base to be modified to your hearts’ desire so get creative…at least you know it won’t be spiked with artificial garb like sucralose or coloring, Amen to that!

Guilt-Free Cacao-nut Protein Cookies


– 60 gms Almond butter
– 80 gms Almond Meal
– 30 gms Organic pure raw cacao powder
– 1/2 tsp (1.1g) Gluten free baking powder
– 56 gms Good quality protein powder
– 39 gms Raw walnuts, crushed roughly
– 15 gms Raw linseed
– 1/2 tbsp Cinnamon
– 1/4 tsp Stevia sweetener (optional)
– Pinch of Organic Celtic sea salt
– 20 gms Organic shredded coconut
– 2 large eggs
– 1/4 cup of water, add as needed
– Coconut oil cooking spray for baking paper


– Pre-heat fan force oven to 170c
– Mix all the dry ingredients together (except the shredded coconut) in a bowl
– Add eggs and water as desired to make a sticky dough
– Mix thoroughly until well combined
– Place the shredded coconut in a bowl
– Form firm, small balls from the dough and drop into coconut to coat
– Place on baking paper evenly and squash into 5x5cm cookie pieces
– Chuck into the oven for 20-30 minutes and pull out when the shredded coconut starts browning nicely
