Here’s a super easy single serve recipe for almond meal protein pancakes. Makes one big one, or 4-5 mini ones if you want to chuck them into a container and run out the door.

Did you know that an ounce of almonds has about 3 grams of usable carbohydrate, plus 3 grams of fiber?

Best part about this is that they’re relatively low calorie and will squash any pancake cravings while being completely low-carb. Smother with lashings of almond butter with a sprinkle of salt for a double nut fix. YUM!

Quick Paleo Almond Meal Protein Pancakes

Ingredients:
  • 15 gms Almond Meal
  • 8 gms (1 level tbsp) good quality low carb protein powder
  • 1 large egg
  • 1/2 tbsp Cinnamon
  • 1/4 tsp Stevia sweetener (optional)
  • Small pinch of Organic Celtic sea salt
  • 1/2-1 tbsp water
  • Coconut oil or non-stick pan
Method:
  • Mix all ingredients in a small bowl or container until a pancake dough consistency
  • Heat up a pan, and cook how you normally cook pancakes

    PS. I tried your protein cookies the other day (although I forgot the coconut and didn’t add any sweetener) and they were SUPER crunchy. Is that how they turned out for you? They were awesomely filling!
